January is the golden month for kale, an iron-rich super food which is versatile and full of flavour. It has been hailed 'queen of the greens' as its high in fibre, low in calorie, and filled with powerful antioxidants.
Kale is great blitzed up in a pesto, or thrown in with a winter stew however, if you really want to make the most of your kale at this time of the year, we think you should eat it raw, so we've chosen one of our favourite kale salads to get you inspired to use this delicious leaf in your home.
Cranberry, walnut and kale salad with fresh cranberry vinaigrette
Contrast the bitterness of raw kale with sweet red onions and dried cranberries, and if you're a cheese lover make sure you try this salad with a little parmesan, delicious!
